LUNCHEON
NEAPOLITAN BEEF
Cook eight pieces of macaroni in boiling water until very tender. Make a sauce of one teaspoonful of butter, two teaspoonfuls of flour, and a cupful of the juice from canned tomatoes. Drain the macaroni and rinse in boiling water, using a colander. Lay slices of cold, rare, roast beef in a deep platter, cover with the macaroni, spread the sauce over it and sprinkle with grated cheese. Put in a hot oven until the cheese melts.
HAMBURGHER STEAKS
Chop raw beef very fine, season with salt, pepper, grated onion, and minced parsley or green pepper. Make into small flat cakes, and fry in lard or dripping. Tomato sauce prepared according to directions given above may be poured over Hamburgher steaks.
